Rich or lean

So i jetted a 700 mm per the book and it starts 2 pulls and i quickly have to turn the choke off and it idles and runs great
Is this a little lean?

Also jetted the 600mm and with choke on it gurggles on start up but clears up after turning choke off and also runs pretty good, little stumble in the mid rpms around 6,000 when steady on the throttle
Is this a little rich?

Both sleds require a light thumb on the throttle for a hot start
Is this normal?
Is this a jetting issue?

The redhead likes a throttle crack when it's hot. My mtn max doesn't but it runs fine. Plugs are always safe rich. Just went through having to clean a carb because 1 cylinder was lean. Almost white plug with the ground strap burned all the way. Even laying up dry clean carbs and a try tank I still had a problem.
 
my experience with the red heads so far is everyone is different. my 700 would take choke for 45 to 60 seconds and then want it turned off. my dads is maybe 10 seconds and it needs to be flipped a couple times and then will idle all day long. friends 700 is between mine and my dads maybe 30 seconds with choke and then it needs to be turned off.
