Clutch issues?

Hey I have an 04 viper er, when accelerating it seems to have a flat spot between 7000-8000 rpms, it runs good up to 7000 but then stays around there and dogs around until you hold it right to the bar, then it's almost like it downshifts and it jumps straight to almost 9000 and will take off, it does it a lot worse on warmer days and barely does it at all on cold days, it also does it worse in deep snow than when in a hard packed trail, what could be causing this?

They are cleaned, I'm not sure how to adjust them

I would start by adjusting them. It could definitely be your problem.
