With stock 9t drivers at 8500RPM, a 19/40 gives you a top speed of 86-87mph. 20/40 equals 91mph. 21/40 calculates to 96mph. With proper traction for grass, I'd be thinking 19/40. If you are running a stock track with trail studs, you will likely spin terribly out of the hole with that low of gearing, so you may be quicker to gear up a bit. The best way to tell is to try it for yourself.
On snow, and in 660' races I would be in the area of 21/39 or 21/40, depending on your setups and conditions.
Good luck with the races.

No, those are just the top speeds for the 3 different gearing combinations I provided with the stock 9t 2.52" pitch drivers. Those speeds would be calculated with both clutches in full shift (not overdrive) at a 1:1 ratio as I understand. If you do a google search "snowmobile gear calculator" you will see several to choose from.
As long as it's rpm is 8500 that 660 set up snow will work ehh 21/40 21/39 I have a 1.25 rip saw with 144 1.325 studs and transfer rods and a growler can
