I found a hole in one of the ski's on our 2000 Venture 500XL this weekend. I am going to replace the ski but am wondering if I will see any benefit in going to plastic ski's instead of the stock ones? If I should go the plastic route can I put any model Yamaha ski on?

for cheap, I'd go with the Yamaha GYT skis from Port yamaha, they seem to have the best deals on those. but, they don't carve very hard, or float well either.
I love my C&A's, they carve and float, and when set up right (like any ski) go straight down the trail, no nervousness. They are harder to turn though...
But, I've got a set of nearly new stock steel skis with skins in the garage I'd sell for $20...shoot me an email if you're interested.

Iv got a 2000 Venture XL with USI VX-301 on it and the difference is huge for handling!, and for touring, they give you that extra traction and bit that you would like.
Yes, you should be able to put any yamaha plastic ski on, but id reccomend going with a set of skis of a trailing arm model, just to minimize the cahnce of something not fitting properly.
