Would like to find out when new, what would be the compression No's on these 2 machines. When checking compression, do you check it cold or hot.
At which point is it time to replace the rings.

126 psi + or - on the SXR 700.
Would only be speculating on your other 2 questions so will let others answer.
SXR 700 is just under 150 psi with the head gasket mod.

For the Viper, should be 110-115 psi for the PTO. 125-130 psi for the center and mag. This is on a cold engine, close to sea level. If your getting close to a 10 psi loss then it's time to fresh'n er up.
Also you can pull off the exhaust manifold, and look at the piston. If you see brown burn marks below the bottom ring, then there is blow-by going on, and most likely a loss in ring seal. This along with a good compression test will tell you if the engine is still sealing well.
