i have a 2000 mm700 and i would like to put a new dual style headlight on it. from what i have read, i have to buy the gauge pod, and the len itself. my next question is are all the electrical plugs the same? and can the stator handle the extra bulb without burning anything out.

youd need the new electrical system as well, the new ones are 300watt yours is 175 watt, if you add the lights to your lower system the headlights will draw too much and either burn out the stator or go very dim when you hit the brake and try to run high beam lights, this has been discussed before, try doing a search for it.
youd need the pod, headlight, wiring harness, stator, etc.

Was thinking of the dual bulb headlight, but overall the price would be way to high to convert to it.

You can get brighter headlight bulbs for the single bulb setups though, and they make a big difference, especially if you put an led tail light bulb in to reduce the current being drawn from the system.
