95 vmax. Can you reuse the head or cylinder gasket. Do I need to hone the cylinders or can I lightly sand them? If everything specs out OK, I would like to just do the rings. It's a 500 with 5,500 miles that seems to be getting a little slower over the last couple years. Could be I'm getting Fatter!!!!!!

No I would't risk the leak. How far can you walk?
Gaskets are not too expensive get them both. But if I had a choice it would be the head gasket over the base gasket.
Besides that good time for a freshen up. Re-ring it and ball hone the cylinders to get the hash pattern back. Since you have it apart you might as well do it right the first time.

You can reuse the base gaskets as they are metal. Replace the head gaskets though, they operate at much more pressure and are much more prone to leakage.
