2003 Viper with can and opened up air box. At idle if I hammer on it, it bogs. If you ease in the throttle it's fine. Re jetted 3 sizes up, same problem. Any suggestions?

Sounds like your low speed circuit is lean, mains wont cure it. You might give your fuel screws a turn, or perhaps your pilots are too small with your airbox mods.

turn your fuel screws out two turns see if that helps, probably getting a lean bog

I still haven't been able to test my 03 Viper out, but I do notice that after warmed up from idle if I hit the gas, it bogs for a split second, and then revs up. Is this nature of the beast, or could it be an issue?

try flippiing up your choke as you hammer it, obviously be careful. if its better your lean and as mentioned above its your fuel screws and/or pilots. if you mean changed your main jets by 'rejetting' your in the wrong part of the carb circuit.
however 2 turns on the fuel screws is quite a lot (sorry, EM not trying to correct you). they really shouldnt be turned out a total of much more than 2 turns. if you need to turn them out farther, you need larger pilots. before you start turning them make sure you know where they are now, turn them in til seated, gently, counting turns.
on drastic temp changes, screws may need to be readjusted.

i would try what tapped throttle said with the choke , if the problem does not get better with the choke on , check your belt deflection ..

Well, took sled out of shop and warmed her up. Went for a burn around yard and stopped. Pinned her and bog was not there. Went for a ride later and it was fine. Was going to go again Sunday, but went to the sled drags at Madge Lake instead.
