It's a stock 03 viper that we've just bought last autumn, only riden it a couple of times due to the lack of snow and at first it sounded like that it only ran on two cylinders.
But last time I ran it, after changing the spark plugs, it would warm up nice and sound like it ran on all three cylinders, but after around 5 min of riding, it would start bogging when giving it gas and die out when letting off the throttle.
Start it up again and it runs okay if I give i half choke for 10-15 seconds, but if I hammer the throttle it bogs and dies again. Have to give it throttle slow and steady to get it to rev and then I can ride it for maybe 20-30 feet and it'll start all over again with the same problem, die out if I hold the throttle or let it go and give it half choke.
I'm not sure when the carbs last have been cleaned, but I would have tried that out first, if I had a shop to do it in.
Any ideas?

Sounds like the carbs need to be cleaned.

dirty pilots most likely. clean em up if still the same try turning fuel screws out 1/4 turn at a time. i had to turn my screws out 1/2 turn after going to a 51/43 helix. had the same symptoms as you describe. if flipping the choke to half helps it means your not getting enough gas

I would agree with dirty carbs, had the same problem myself and cleaned mine.
