Since I'm new to the 2 stroke world I was wondering how much oil would be used per 12 gal. tank of gas. I would rather run it a little on the rich side to prolong the life of the motor. I will be using Amsoil synth. as well.

adjust the oil pump cable, so it has NO freeplay in it. you will be fine then. no need to add anymore to the gas tank.....don't need to do that.

I have heard that if you use around a quart of oil every time you fill up an empty tank, you should be just about right.

I've heard that too. The guy I ride with did that and endedup getting 24,000kms out of his '98 V-Max without any issues at all.

Vipers came from the factory to lean IMO, a good 40 to 48:1 would be fine
for a vipe.
example...
for a 12 gal tank
1 gal = 128 oz. 1 qt = 32 oz.
12 gal = 1536 oz
If you want 50:1, then 1536/50 = 31. You should burn 31 oz of oil per 1536 oz (12 gal) of gas.
31/32 = .9 -- 31 oz = 90% of a quart.
If you burn exactly 1 quart of oil per tank of gas, you're running 48:1 fuel ratio. (1536/32 = 48 ) 48:1, almost 50:1, real close.
i wouldn't go any leaner then 50:1

the cable is adjusted for distance. pull the cable apart in the middle by the carbs. when you hold it apart, it should measure 20mm(rich) to 22mm(lean). If you run it too rich it is will crud up your powervalves quicker. 22-23mm is better. The reason for this is that the pump is always pumping in proportion to the engine speed, when the cable is adjusted it is only adjusting when the pump goes to full rich in relation to the throttle cable. If you try to run your power valved motor with the oiler going full rich too soon, you will just be helping to pile up oil to be baked onto your power valves and coat the inside of your exhaust. richer is not better in all cases. on a non powervalved motor, you can do what you would like there is really no adverse affects other than a dirty exhaust. if you let the dirty exhaust thing go long enough, the pipe volume will change, mufflers can get restricted, especially stinggers.
run the oiler on the leaner side with good oil(any)and use ring free or sea foam to help keep the exhaust valves and exhaust clean of burnt on oil and carbon deposits.
on my srx and viper i ran as high as 24mm, the srx is still going, the viper, well that is a different story with other variables. if i set someone elses up, i always us 22mm
