I'm Getting new oem hand grips for my 01 srx, curious to know how to go about removing the old wire, do i gotta follow the wire down to where it goes or do i just splice into the wire when i put the new grips on, Not really sure if the oem hand grips come with the wires and everything or what.

The OEM grips have bullet connectors on them, just take the handlebar pad off and follow the wires down, unplug the connectors and you are good to go. Reverse the instructions to wire the new ones up!
