I bought a riser and extended cables. How the heck do you change out the dang oil pump cable? I can not get to it and I am worried even if I get the old one off, how do you re-attach the new one

I had to pull the motor mount that sits over the pump when I did my redhead's cable.

Just did a Viper cable, and then a Viper pump and cable which are similar. Pulling the motor mount was key to both. One bolt to the frame and 2 bolts to the engine. For the pump replacement, I had to pull the mount off the frame too. Just one nut above the front heat exchanger between the track and the tunnel. That one is hard on the fingers but doable.
I got some help from another forum, just in case someone else needs the instructions here they are: remove air box, remove the three carbs leaving the boots on the block(only unplug the fuel lines and not the coolant lines), remove the center and right carb boots, remove the center motor mount and you are there, the oil pump will at this point be exposed. This sounds harder than it actually is. It took me two hours and a couple beers from the time I started until I had the machine buttoned back up ready to ride. If anyone has questions shoot me a PM and I'll help where I can.
