I had installed a Water temp gauge on my 2001 MM 700 last summer.
The adapter with the sensor is placed right behind the "thermostat cover"
It revealed to that the watertemps fluctuated wildly. All the way from 96C (hardpacked trail) down to below 30C (in fresh powder) on the same ride, yes it had been warmed up first. The sled did not seize even when giving WOT when the temps were real low.

My question is, is it really a thermostat or is it just called a thermostat? Is it my thermostat that is broke?

There is no "thermostat" there. That is why there are wild fluctuations. The redheads don't actually have a thermostat.
