Ok, so im not sure what the exact term for it is and honestly havent looked, but are the wind protector plates on the outside of the secondary really necessary?

no. the windage plates are there to reduce turbulence for high speed applications and in my opinion and experience, also reduce the effects of the built in cooling fins creating excessive heat in the secondary. i take them off all my sleds.
i c, makes sense. Probably reduces weight as well by taking it off.

The weight reductions are not a factor compared to the fan forces that are created without them. If your clutches are properly tuned and not generating excessive heat, these do increase top speed.
