Does anyone have a step by step set of instructions for changing a helix?

pretty simple, you can do it with the secondary on, I personally find it easier to take it off... Just take the center bolt off to remove secondary, then when its off, the 3 little 12 mm nuts need to be removed, after you remove them just pull the helix off, be careful however as its under some spring tension! Install your new helix with the spring andproper wrap (spring tension) then just bolt the secondary back on, torque it to spec
Im sure if you search hard enough here in the tech pages you'll find a breakdown of the secondary and you'll see what I mean
