I would rather to be safe than sorry. So I'm looking for a little piece of mind from you mechanically inclined people out there.
I would like to remove the oil injection from my grandson's 1979 Enticer and run mixed gas.
Can someone tell me the steps I should take in doing this?
Is it as easy as removing the pump?
What do I need to do with the hoses and fittings? Just plug them?
Any info will be greatly appreciated.

Won't tell you. That sled would be more reliable with the oil injection functioning. Bulletproof is the word most use.
Check out the system, get it working/adjusted properly, fill her up with gas/oil and ride. They don't break down from oil injection issues.
