How would a guy know if his crank is bad in his viper?

by taking the engine apart, to get at the crank and rolling the rods and bearings and inspecting everything.
The motor will pull over hard or lock up completely when the crank bearings go. It might also squeak and squeal. If the rod bearings go the rod will bust and/or you can hear the clatter of the piston smacking the head.

ok. i lost a cylinder and piston and was hoping not to have to split the case.
If you want to cheat you can rinse the case out by putting some premix in there and dump it or suck it out. Do this repeatedly. You want to rinse or float all the crud and particles out. It depends on how messy the burndown was. Cleaner is better!
