Does a rear cooler from an SRX work on a Viper and how to mount?

Yes it does.
I have a set of instructions and templates here for drilling mounting holes. If you want I can fax them to you.

I thought you only had to drill one hole for the bleeder. Is there more to it than that? I'm going to install one on mine also. And what about protectors? Can they be fabricated?

I just put one in my 02 when I rebuilt it in January. I just lined it up and drilled some new holes in the tunel and rerivited it in. Drilled a new hole for the bleeder, seems to be holding up fine, 520 miles on it.
