I'm going to look at a 97 vmax 600 twin in a couple hours, 6700 miles, about how much compression should a motor like that have?

Don't worry about number. Just make sure they are all equal. All gages different, wet, dry, ect..

One thing to do though is have a helper or bring something to tie the throttle wide open. You want to make sure that the proper amount of air is getting into the engine so you get a good reading

I went and looked at it, compresion looked good but the rest of the sled was a pile! I'ts funny how a sled can look good in a pic and the seller says it's in perfect shape but when u get there it's total junk. lol Going to look at a couple triples tonight.
