I just had my full exhaust system ceramic coated on my SRX. I guess I need to put something between the pipes where they rub to keep from scratching the coating off what have people done in the past. Should I put the stock heat shields back on?

Use header wrap in strategic places between pipe & shield in order to preserve the coating.

I was thinking header wrap or some sort of fiberglass matting. Or maybe muffler packing.

IMO:
The SRX stock pipes work as well as they do in part because of the consistent temperature afforded by the heat shields.
I would polish up the stock heat shields, attach them again and install the pipes with all the stock hardware. You won't have any installation issues or rubbing problems and you will be able to enjoy "miles of smiles".
