The highest octane we have in town is 91. No issues with 91 and was pondering dropping to 89. But h3ll, if your at 87 octane, I feel safe/better dropping to 89.I have always run 87 octane in both my 95 and 96 for 20 years now without one single problem. Same compression ratio in both sleds. My XT should hit the 10,000 mile mark this winter as it is only 700 mile short now.
Would this be the appropriate head gasket? http://www.benderracing.com/High_Performance_Head_Gasket_Twin_600_p/hgp96.htm

Yes as yours is a 96.
Actually just found a pair of Vforce never been used on ebay for about 150 bucks going to make a spacer out of the old reed cage just need the thinner head gasket and i will be good to go
I have been reading some more and read that the mountain max 600's came with a .8mm head gasket as opposed to the 1.4mm installed on the regular vmax's. Can any confirm this?

You can measure the head gasket thickness while its still installed. It has 2 sections that stick out beyond the cylinders. It where the brass rivets hold the layers together.
The factory part # for a 94-95 600 head gasket is 8CA-11181-00-00. You can find them cheaper than Bender sells them for, like Amazon of all places:
