Hello, I have a new to me VT600G. Bought it non running, gave the carbs a cleaning and now she "runs".
The issues I am having with it are:
Sled will only idle/run okay on half choke. Full choke it will eventually die like normal. No Choke it will Rev up extremely high and start sputtering
When the sled is on NO choke, the idle screw does absolutely nothing. While its on Half Choke, the idle screw works normal.
The Sled smokes pretty dang bad, the oil adjustment is within spec. Fresh oil. Fresh Gas.
Other than being smokey, the sled runs pretty good on half choke.
I'm not really sure what direction I should start looking for the cause, I took the carbs back apart for another clean incase something was wrong and that made no difference.

welcome!
sounding like the cranks seals have failed. needs the extra gas from the choke to run right.
it will smoke until it is up to operating temp and if running in a above freezing temp, it will still smoke a bit as it is jetted for running below freezing. when it quits smoking blue is when i would worry.

Is there any real way to test if that's my issue? Forgive me for being naive, I'm pretty new to working on engines of any sort, so this is all a learning curve for me.

Could it be the TORS?

Clean the pilot jets again or buy new ones.
I bet they are still plugged. The holes are very small.

with it running, spray the flamable brake cleaner or starting fluid down behind the clutch and behind the flywheel. it will pick up rpm from more fuel. had et340 doing the same thing and the new seals cured it.Thank you!
