You're absolutely right, the 500 liquid twin (2000 dlx) is a pig as well. My mother has one and she is always using 3-4, or more gallons than anyone else in the group. We've had it checked out time and time again, there seems to be no issue other than that in stock form, it sucks gas. But it is strange since my sister had a 500 Liquid twin(1999 SX) as well and would get nearly twice the mileage that my mother would get on her 500, never could figure it out.
 
I had a 95 vmax 500 liqued....stock....easy on it and it would get 14 to 15,,,,,beat it and it got (9). I put 3500 miles on it...and purchased it brand new....I went to vmax4 becuase I figured If I was going to get around 10 then why not have 140 horse to play with...
 
My old PHazer II was good on gas, ~15mpg riding normal down to the 12mpg range trying to hang with WAY faster sleds before I bought my SX-R.

If they can comne out with a ~400lb twin 4stroke sled with at least 80-90hp my sx600R is going by by. Possibly a supercharged twin?
