I know the 700 triple is a very good motor, and the 600 twin is a little iffy, but how is the 600 Triple? I am thinking on purchasing a used 600 Triple and need to know if I should worry or not.

the 600 and 700 non pv tripples are one of the most reliable two stroke engines made.

I owned a Vmax 600 triple...beat the snot out of it and NEVER put a dime into it for 6k miles! Sold it to a friend who now has almost 10k miles and has not rebuilt event the top end yet...I'd say they are great motors..
My old 00mm 600(triple) is still going strong not been touched 44 000 kms on the clock.
Triple is definitely better than the twin...my wife's 500 Vmax had 5k miles and have rebuilt the top end...Not nearly the smooth powerband the 600 has...Should have kept that one and sold the 500..

44,000 kms????? Is that right?

How many tracks, clutches, bearings has it been through? Wow!
