My track makes a ratcheting noise when I take off. I have adjusted the track to about and inch. Any thoughts? What exactly is anti-ratcheting drive sprockets. How do they work?

Well anti-ratcheting sprockets are extroverted. Meaning they have lugs that fit into the "Windows" of the track for extra grip.
Are you sure it is ratcheting track sounds and not chain/gear issue in the chain case?

if you got a 1' gap from track sag I'll bet you have to go tighter
I just tight 1 turn in each adjuster till it stops ratcheting

I'm with Fuzzbut. Usually your track only ratchets at speed in deep powder. If it's ratcheting from a dead stop or close to it then you probably need to check your chain tension. Very easy to do, The adjustment is on the outside of the chaincase cover, loosen set nut and adjust till just finger tight. Do a search on here for other help. Soc

I also, concur with Fuzzbutt and Sockeye, I had the same thing happen this fall, after I had the skid out, After I tightened up the track, It turned out be the Chaincase tensioner had worked itself loose.

I disagree that a track usually only rachets in powder. When I was racheting my track it was when I be on hard pack really hooking up which would put a ton force on the drivers and if the track isnt tight enough it will slip or rachet on the drivers.COuld be your chain though, only one way to find out.

my sled does it. i have found that where the sliders stop at the front up against the rounded plastic stopper, as the track turns, the metal on the track bumps into the round slider stops because they tend to loosen. they are only held on with a rivet. this is what i have found is making the ratcheting sound on my 2000 sxr 500.
