does it matter which way they go? Heads of rivet to the same side as the stamp (8DN 10)???

I would make them all the same. Its your best chance at keeping everything as close to perfect balance as possible.

I have always put the rivets in from the side of the weight that is stamped with the number. This is what the manuals say to do. I have never put them in the other way, so can't tell you if it makes a difference or not.
