At mid and high speed my '01 SXR500 runs smooth with good acceleration, but at low speed the engine has a gurgle and rumble. Both plugs have a bit of oil on bottom threads and the bottom of the plugs look washed with no real color to speak of. Fuel consumption also seems excessive.
What should I do to fix low speed gurgle?

Not sure if the 500's are the same as the 700's but I used to have the same problem. I raised the clip on the needle valve in the carbs from 3 to 2 and voila, no more burble. Do a search on carbs or even low end burble and you'll come across this fix. This site is where I found it many years ago. 

fuel milage on the 00-01 sxr500 was not that great to begin with. i know i owned one. only could get 7-8mpg out of it on a good day untill i changed the chaincase gears to match the vmax 500's. then it went up to 10mpg and top speed went up as well to 93mph from a solid 80mph with stock gearing.

Drop your needles half a clip/clip may clear it up,there were fat from the factory.

Raised needles to top clip. Still gurgles and now running a bit lean causing poor acceleration. What else should I try?

If you raised the needles up that would make it richer. If you raised the clips thus dropping the needles that would make it leaner. Sorry - I raised clips to the top notch which dropped needles. No improvement. Just cleaned and re-adjusted carbs. still low speed gurgle and intermittent rumble. Mid to high speed great. I just can't seem to figure this one out. My compression is around 100psi per cylinder. Would that have an impact on low speed operation? Certainly has no effect on mid to high speed.

100psi is way too low. I would suspect worn and leaking rings. A 2 stroke engine should have at bare minimum 115psi compression. My 600 triple has 133 - 132 - 134. Time for a rebuild my friend! I would also check for base gasket/crank seal leaks along with head gaskets but I think your going to end up rebuilding it with new rings and such.

I did - raised clips to top to lean out factory fat. low speed operation got worse. Good point on compresson tool. I checked with my other sleds and even the '70 model panthers registered with much more compression.
I guess it's time for a top end rebuild. Seem strange with only 1200 miles? Wondering what would have caused this. Did have a leaking head gasket and was overheating last year. Could that have been a factor?
