hello,
has anyone took off the airbox and replaced it with k&n universal filters on a 03 vmax 600? How many jet sizes are you supposed to go up?

General consensus here is to leave air box and for good reason.
The air box does more than you might think. There is an article
that was written about air boxes online just cannot think of it right now.

All the above and want to add every one that I know of that has ever tried them seems nearly impossible to get all three to stay in place. No matter what one or more seem to fall off as your bouncing down the trail.

NO NO NO! I burned up my first sled (Polaris Indy 600) by putting snow pods on in place of the airbox. The motor will be very finicky from pressure changes under the hood, jetting goes all over the place from the temp changes to the intake air and the worst of all was sucking steam through the motor from snow getting on the muffler and pipe and flashing to steam. It washed they cylinders real bad. If doing a powder run across a field I would have it die half way across from the steam overwealming what oxygen was available under the hood for it to stay running. Best to leave the airbox alone, Yamaha went through tons of testing to get it right, you won't get what you think you will by a "free air" intake.
