I have a 700 VMax with reed stops notched; stock can bored; middle gasket removed from head gasket and stock single pipe. The carbs are stock setup with the exception of fuel screws which are out 1-3/4. I checked the plugs after riding 5 miles in 30 degree weather and all 3 were very light tan and dry. The threads were a little black and slightly wet. Is this too lean or will it be too lean when its 10 degrees out?

Sounds like it is running good, but you cannot really tell unless you look at your piston wash. There is a good chart on the tech page that compares different engine conditions to different appearing piston washes.

How white do they need to be before you have a problem?

water: if you have the stock mains and needle setting on your sled, your more then good, it wont blow up from being lean, those things are pig rich from the factory.
