You could start by giving the rear shock more preload, if there is a way to do that. But I'm not too familiar with the 95 st suspension.

pretty much goin to have to replace the skid with a newer one with a better suspension in it!

jacking the back of the skid up is a bad, bad idea... People do it for looks and to give the sled a little more capability in deep snow, at least that is the idea. The problem is that to do it properly, you also need to lower the front of the skid, and increase the preload on the skis. Those last two are hard to do/impossible on a vmax. lowering the rear of the skid will make an already front heavy sled even more so, and will hurt the already poor suspension ability. (lowering it does absolutely nothing for travel or capability, its still the same crappy suspension under there.)
Best way is to swap it out entirely for an X10, or other similar suspension. Lots of people, including myself, have done that. Night and day difference!
(also, without extensive modifications, a 2 inch paddle track will NOT fit in there. You wouldn't want a 2 inch 121 track anyway, it would be a trench monster without any flotation to it. A 136 would be the minimum I'd run a 2" on, and then you are running into the problem that its only a 500.

the track is 136", im looking to do this for performance , not looks, been doin research and im pretty sure i can go up to a 1.75" trck if i put a 7 tooth drive wheels in. a newer skid would have to b used for better suspension. and as far as a 500 not turning a 2" paddle track , there should b no problem, lots of 440's have them , lol thx for everyones input!!!! ride or die!!!!!!!

What type of performance are you looking to gain? Like what was said earlier, raising the back of the sled is more for deep snow riding. It wont gain you any trail, bump, or speed performance,in fact, it will make it worse. Do you do mostly deep snow riding?
