stator problem
Fortress, I agree with MRVIPER700, I am a 23 year electrician in the navy and electrical componets can test out fine with a meter but they will break down when actual voltage or current is sent threw. I have seen it many times!!! I also had stator issues with one of my older VMaxs few years ago, I would also check the wiring as yamahahauler suggested, I heard of the wiring harness issues and did that fix and never had any issues! Good luck!

I have also seen a broken reed petal result in really gutless acceleration but you could "feather" the throttle to eventually get the RPMs up. Have you checked your reed valves??

CDI boxs - change it!
fortress,
Had an '83 VMAX 570 that did this same thing. It would run good sometimes, other times is would run rough or not at all. It wouldn't run at all below 12 degrees F. I took the CDI box out and tested it several times. Each time it would test out ok and then I would put it back in. I finally got VERY frustrated and just went and bought a new CDI even though I was sure it wasn't the CDI and didn't want to spend the $$$ to get a new one.
Well low and behold it was the CDI. The sled ran great after changing it out. So, now I am of the belief taht if you have a problem that you can't find after checking and rechecking everything, it is most likely an electrical problem and the CDI box is going to be my first try next time something like that happens again.
